OT: White Chili
Well, I'm trying the white chili. I don't know how well it is going to turn out. I think I used the wrong recipe. I have two different ones and I am making the hardest one and I am really worried. LOL
It was supposed to be done a half hour ago and it isn't... so far, everyone is being patient.
I made one that used dry beans... and well, my beans aren't getting soft fast enough! It is totally not following the recipe. My other one used canned beans. I'm going to try that one next time!
Another thing that bothers me is that the one I'm making has fresh cilantro in it. The other one doesn't call for cilantro at all. Well, cilantro is a very strong herb... It said half a bunch. I worry that MY bunch may have been larger than "THEIR" bunch (whoever wrote this recipe). I think it has too much cilantro in it...
UGH... Oh well, at least the cornbread will be good. It is Chili Cheese Corn bread! YUMMO!
Got to go check the chili. I've already had to had an extra can of chicken broth to it because it has cooked down so much!

Here's the Bush Beans Recipe...
INGREDIENTS
- 3 tablespoons olive oil
- 1 medium onion, finely chopped
- 1 (4 ounce) can chopped green chiles, drained
- 3 tablespoons all-purpose flour
- 2 teaspoons ground cumin
- 2 (16 ounce) cans BUSH'S® BEST Great Northern Beans
- 1 (14.5 ounce) can chicken broth
- 1 1/2 cups finely chopped cooked chicken breast
- Shredded Monterey Jack cheese (optional)
- Sour cream (optional)
- Salsa (optional)
- In large skillet, cook onion in oil for 4 minutes or until transparent. Add chilies, flour and cumin; cook and stir for 2 minutes. Add beans and chicken broth; bring to a boil. Reduce heat; simmer for 10 minutes or until thickened. Add chicken; coo****il hot.
- Garnish with cheese, sour cream and salsa, if desired.
