No bake cookies that everyone ask for
Thought it might be easier to list the recipe so everyone may enjoy these...Please make sure you check with your doctor if you are not sure about the ingredients...
2 cups sugar.....i use splenda
1/2 skim milk
1/4 cup hersheys cocoa powder
1 stick low fat margarine
1/2 cup peanut butter
3 cups quick cooking oats
Combine sugar, skim milk and cocoa powder in a pan...Bring to boil, stirring constantly...once it boils, cook for about 2 minutes....remove from heat and add peanut butter, and oats....if mixture seems to thick, just add a small touch more of the skim milk
I have my oats and peanut butter pre-measured and ready to go in ....Stir well and drop by small serving size spoonfulls onto wax paper...Using splenda will leave the cookies a lil gooey compared to using regular sugar....but thats fine, as once you freeze they turn out fine....I leave mine on the wax paper, and place on styrofoam plate and toss in a large zip lock bag....they stay really nice this way...They are good to toss in a cooler on road trips....
* optional is 1 tsp vanilla....i dont use it in my recipe...

Those are great and here's another one that I enjoy as well.
Chocolate Meringue Bites
2 egg whites
1/4 teas cream of tartar
1/4 cup splenda
1 Tablespoon cocoa powder
Beat egg whites and cream of tartar with electric mixer until white and glossy. Add splenda and cocoa and beat until still peaks form. Drop by heaping teaspoons onto a brown paper-lined baking sheet. Bake 2 hours at 225 degrees. Turn off oven and leave meringues in oven for 2 more hours. Makes 24 servings. They are crunchy so it's something to chew. Enjoy!
