Spaghetti squash lasagna

You guys should try this recipe. It was a winner at my house. I don't kknow the figures but it can't be all that bad. I try to fix things the family can eat thatn I see if I can eat it. With what little I can eat. It will not hurt me and it is pretty good for me. 1 spaghetti squash As many Mushrooms as you like ( 6 to 8 oz) 1 Container of cottege cheese or ricotta cheese (Lg) 1 jar of spaghetti sauce 1 pound of cooked diced chicken breasts 1 med onion 1 med green pepper 2 stalks of celery 2 cups of mozerella cheese I cooked the squash for 35 minutes at 350 and then shredded with a fork and set aside. Then saute onions, green pepper and mushrooms with the chicken until done. Layer the sauce, cheese, squash, meat mixture, and cottage cheese in that order all the way to filling up the pan. Top with the remaining cheese and cover and bake till hot . Serve with a salad and veg. Let me know what you think. Richard

Richard, I made a copy of that recipe. That sounds really tasty family meal. I wish my husband would cook like you do. He will have to start eating what I eat. He is tall and thin and can eat anything he wants and never gain a pound. When I would diet he would sit and eat ice cream in front of me and go hummm this is so good, So now he gets to eat healthy with me. Or learn how to cook. Take Care Barb

I just try to make things a healthier way and pretty much what I found is that you have to make everything from scratch. I don't mind it because I love to cook. Like I said the family does not want to cook so they eat whatever. Most the time they don't know. LOL. Richard

richard, some speghetti sauces are loaded with suger. Hunts makes a low sugar version that tastes very good. I have trouble with most other spaghetti sauces but this one works well for me. it just so happens my darn garden just began producing zuchinni and squash and i have a ton of it. so i am certainly going to try this recipe. i will print it out and give my neighbors squash to make it with, lol.. you take care and have a great monday. i go see my pcp this morning and i cant wait to see what i am on his scales. love and hugs laura

Hi Laura, Yes I dump and man pretty bad at times LOL. I have found that I don't dump on certain things or it takes more of somethings. LIke sauce does not affect me, however, something with very little sugar will make me sick as a dog. So yes, watch the sugar if you can't do spaghetti sauce. I did not miss the noodles at all in this recipe. I hope your visit with the doctor went great. Let us know and wow what a difference in the pictures. You are looking great and sound teriffic. I had a great appt with my pcp. He was bowled over by how much weight I had lost. All of my blood work came back normal. My cholesterol was only 101, and my triglycerides were for the first time in the normal zone. My bp was 110/72, all of my nutritional status tests came back great, no deficiencies. He took me off of my Lipitor, is weaning me off my heart meds slowly to make sure I dont go into failure, off the lasix, off the ambien at bedtime, off the potasium and iron.. It felt strange coming home from the pharmacy with so much less medication. Strange but wonderful!!! He couldnt believe I am down 126 pounds in four months, and still doing so well physically. Other than the thinning hair, and he said that will bounce back soon enough since I am getting my proteins and vitties in. So I am one happy camper today. I am anxiously waiting to go and pick my daughter up from college and turn over my grandson to her. He is 19 months old and into everything. Then I am finally going for my swim... Cannonball!!!!!!!! You are so funny, I am so glad everything went ok with the doctor. It makes a person feel so great to get off those medications. I knkow I felt so much better. And drum roll..... 126 pounds....woohoo!!! Like james brown said... I feeel good!!!! Richard

Wow !!!!!! What wonderful news. I know what you mean about the meds. I am so glad your doing so well. That gives me so much hope. NOONE KNOWS WHAT IT IS LIKE TO LIVE WITH CHF. Not unless they have been there. It draines your everylast energy and take your every breath to do the smallest thing. It just wears you out., I Hope and pray I do as well as you are Take Care Barb
