Wanting to put together a family friedly cookbook for WLS
Hey everyone, I have a 10, 7 and 1 year old. My biggest problem has been finding family friendly recipes and snack ideas. I am in the process of putting together a cookbook for other WLS patients and was looking for some new ideas. Let me know if you have a recipe or snack idea. Thanks!!!! Monica [email protected]
Crustless pizza
Softened 4 oz of cream cheese
4 eggs
1/3 cup heavy cream
1/4 cup grated parmesan (the dry, sprinkly stuff)
1 tsp chives (using fresh will make a difference!)
1/2 tsp Italian Seasoning
1/2 tsp garlic (fresh minced or minced in a jar work best)
3/4 cup Pizza Sauce
3 cups grated cheese
Heat your oven to 375. Beat the cream cheese & eggs together. Add the cream, dry parmesan, garlic and seasoning. Spray a 9x13 with non-stick spray. Put 2 cups of your cheese in the bottom of the pan - spread it around evenly. Pour the egg mixture over the cheese, kind of poke at it until all the cheese is covered with egg. Bake for 30 minutes. Remove it and spread your pizza sauce on the top. Add whatever toppings you want.
Some suggestions for add ins:
Turkey pepperoni
Hormel bacon bits
Browned turkey sausage
Browned hamburger
Chopped onion
Top with remaining cheese, bake until cheese is bubbly/browned, and let it cool for about 5 minutes before you cut it.

Pepperoni Crisps
Prep Time: 3 minutes
Cook Time: 1 minute
Directions
Place a double-layer of paper towels on a microwave-safe plate and add a single layer of HORMEL® Sliced Pepperoni. Cover pepperoni with a single layer of paper towels. Microwave for approximately 1 minute, or until crisp. Rotate plate every 20 seconds if your microwave is not equipped with a turntable. Cool pepperoni crisps on paper towels. Repeat and make a big batch to share!
SERVE WITH
chili con queso or guacamole for dipping.

Taco Meatballs
1lb lean ground beef
1 package of taco seasoning
2 eggs
1/2 block of sharp cheddar cheese (cut into small cubes)
beat eggs and add beef and taco seasoning mix well. Mold tablespoon of meat around a cube of cheese to form a small shped meatball.
Place on cookie sheet sprayed with Pam and bake at 425 for 7-10 minutes.

Cottage Cheese Pancakes
1/2 tablespoon butter, melted
2 eggs, separated
1/2 cup small curd cottage cheese
1/4 cup all-purpose flour
salt
1. In your blender or food processor combine butter, egg yolks, cottage cheese, flour and salt.
2. Blend at low speed until the batter is smooth and no curds remain.
3. Beat egg whites stiff but not dry.
4. Fold into the cheese mixture.
5. Drop batter by the tablespoon onto a lightly greased hot griddle or skillet.
6. Shape the pancakes into circles with the back of a spoon.
7. Flip pancake when underside is lightly browned.
8. Serve with Fruit syrup or fruit preserve or fresh fruit

Buffalo Chicken Dip
1 lb skinless, boneless chicken breast, cut into 4 X ½ inch strips
4 Tbsp Butter
6 Tbsp Hot Sauce
1 Tbsp white or cider vinegar
1 cup mayonnaise (use light or fat free)
2/3 cup sour cream or plain yogurt (use light or fat free)
2 tsp Worcestershire sauce
2 oz (about ½ cup) crumbled blue cheese (use light)
Preheat the broiler
In a small saucepan, melt the butter. Whisk in the hot sauce and vinegar.
On a broiler pan or baking sheet, toss the chicken strips with half the hot sauce mixture.
Broil the chicken, turning once, until tender and just golden, 7-9 minutes.
Remove from the oven and pour the remaining sauce over the chicken.
Cut chicken into small pieces or puree in food processor.
In a bowl, mix together the mayonnaise, sour cream and Worcestershire sauce. Stir in the blue cheese.
Allow chicken to cool before adding it to the cheese mixture
Serve with celery or chips.
