Chicken cordon blue (without the Cordon.) 1 pound thin boneless chicken breast 4 slices lean boiled ham 4 slices low-fat Swiss cheese (or any you prefer) Cooking spray 1-cup mushrooms (can use canned or jarred but fresh is better) Green onions chopped ½ cup white wine ¼ cup fat-free low sodium chicken broth 1 teaspoon dried tarragon (can omit if do not have) Salt & pepper to taste (not to much salt) Please remember eat only what you can. Do not overeat. chew well. All meals should take a minimum of 30 Minutes to eat. This can be frozen. But the family will enjoy it also! 1. CUT POUNDED CHICKEN INTO 8 THIN CUTLETS LAID OUT TOP WITH 1 SLICE HAM 1 SLICE CHEESE AND THEN TOP WITH SECOND CUTLET 2. COAT A NONSTICK SKILLET WITH COOKING SPRAY AND SAUTÉ LAYERED CHICKEN-HAM-CHEESE OVER MED-HIGH HEAT, CAREFULLY TURNING ONCE FOR 8-10 MINUTES, UNTIL GOLDEN AND COOKED THROUGH. REMOVE TO A PLATE AND KEEP WARM. 3. RESPRAY PAN AND SAUTÉ MUSHROOMS AND GREEN ONION OVER MED-HIGH HEAT, STIRRING FOR 3 MINUTES. ADD WINE TO DE-GLAZE PAN, STIRRING TO SCRAPE UP ANY BROWN BITS, UNTIL IT'S REDUCED BY HALF. 4. ADD CHICKEN BROTH AND TARRAGON AND SIMMER FOR 2 MINUTES. Stir IN ANY CHICKEN JUICES THAT HAVE ACCUMULATED ON THE PLATE AND ADD SALT AND PEPPER TO TASTE. Any questions just e-mail me or post! Howard Rubin

Hi Howard , That sounds positively DE-LISH!! I love cordon bleu--and as far as I can see --you didn't leave out the Cordon at all--all the tastes are there. Have you any idea of the protein count or the calories in the dish??? Be Blessed. Marian S.C.
