Mother's Day Breakfast

I am now almost 6 weeks post-op and eating small portions pretty well. Coming from an Irish household a traditional Irish breakfast was a part of holiday's my house every year. My mother passed away last year shortly after mother's day. I wanted to continue this tradition after she was gone. Well today my 5 year old son got up and said mom are we having our Irish breakfast. I had everything in the freezer but really wasn't sure if I could face making it for them and not eating it myself. Well as I cooked I got the idea one small bite of each thing. I cooked my white and black pudding, the sausage and the eggs. I thawed out the brown bread and put a small piece of irish butter on it. Well, it was wonderful. I savored every bit I know it is not something I can have every week but HAPPY MOTHER'S DAY TO ME. I can still have what I like but with smart portion control. Happy mother's day everyone.

Eileen, Happy Mother's day. It's great to keep up with traditions. We've lost so much of that over the years, and it is very special for the kids. And see that, you even got to enjoy. Love, Janean
