Try this great lunch!

Hiya, everyone!

So, I just had the greatest lunch and I thought I would share it with all of you!
I am sure some of you may have had this, but I never did until I tried it at a diner. But, I made a better version myself! YaY for me!

Heather's Super Chunky Yummy Chicken Salad
I know, ya love the name! =)
This makes 6 servings =)

1     12.5 oz. Can of all white meat Chicken packed in water
3-4   tablespoons Hellman's Light Mayo
1/2   cup Chopped Pecans
1/4   cup dried cranberries--I realized mine are sweetened, but if you can find  
                                                 non-sweetened go for it!

Drain the chicken and empty into a small bowl.
Break up the chicken with a fork.
Stir in 3 or 4 tablespoons of Mayo--to your liking.
Measure out the pecans and cranberries and mix evenly through the chicken salad.

Measure out 1 serving--this recipe makes 6!
Enjoy with crackers, veggies, or even by itself! It is definately chunky and crunchy enough to stand alone!

Hi Heather...

That looks really good. I will have to try that, I just bought the canned chicken today.  I don't have the pecans or dried cranberries. I haven't eaten nuts yet. I just had my surgery on Dec 18.  So I am almost a month out. I have been definately branching out and trying lots of different foods.  Today I ate chicken & brooccoli from a chinese place. Only eating just the chicken and not the broccoli or the rice ect.....yeah, I got it stuck! Ate way to fast, barfed a couple of times to get it up and things relaxed.  Then about and hour later I ate more, chewed it really good and everything went fine.  Ok, well I'm rambling here, but I will do the chicken salad tomm when I get to the store and get the nuts & cranberries!!

Oh, you are so welcome! I'm glad it sounded good to you! Sorry to hear about your chinese food--that seems to be a problem for lots of people. And, I too am a fast eater. Luckily, (knocking on wood), I haven't had anything come back up yet. I had my surgery on Dec. 1st, so we're not too far apart. =) I'm not sure what you're up to yet, and the canned chicken does tend to be quite moist, but early on, I used a small mini-chopper(like a tiny food processor) to blend the chicken with the mayo--I also did this for tuna. It made a nice, smooth consistancy that was very very easy to get down. Hopefully the nuts won't be too difficult since you can chew them to almost nothing--nuts have been a great addition to and now staple of my diet--but I try to get the unsalted ones. Just be careful with the dried cranberries--make sure you chew them well, but I haven't had a problem with them. =)

Sorry to hear about the icky weather! We had a few flakes this morning, but nothing too bad, thankfully. I love looking at the snow, but hate to have to go out in it!

Anyway...I will be posting in the future about some other great things I find and try...and I'll keep my eyes peeled for other great things from everyone on here! =)
