how do u eat canned corn beef?
Chipped beef is cooked in a white sauce (flour, butter, cream or milk) and served usually over toast.. This along with the white sauce is VERY high in FAT..
at 3 weeks, you should be on pureed soft foods. Not something I would personally try... But to each his own.

You could try warming it up almost like a corned beef hash maybe. I think my mom used to make a ham salad-ish thing with it. If I remember correctly she would add a little mayo, ketchup & relish. You could try that. I don't know how else to eat it. How's the fat content in the meat itself? I know making the chipped beef stuff would add tons of fat to it but it might be kind of ok at this point. Be careful & go slow with it!!
I made a "noodleless" tuna casserole that you might be able to eat if you can tolerate tuna. I took a can of tuna (drained & mashed up) - added a 1/2 can of fat free cream of mushroom soup, some onion powder, garlic powder & pepper to taste & I mixed in a few tablespoons of canned baby peas (they're really softer than frozen). Mixed it together & heated it either in the oven or in the microwave. It tasted similar & was a nice change. (BTW - don't use albacore tuna, it's too dry - use chunk light in water, it has more moisture to it!!)
Good luck & let me know how the corned beef experiment went.
