Any DS'ers here?
Any DSers that might be here (primarily myself, and occasionally Scottie... can't recall seeing any of the other NY DSers on this board) are mainly on the DS board... but I think you knew that already 
Anyway, to answer your question....
I live upstate (near Albany) but had my DS in NYC... all my labs are drawn by my PCP and I pick up copies of the lab report when they come in... then I fax and e-mail the report (sometimes faxes get lost down there) down to my surgeon.
I would think you should be able to get the labs drawn by your regular doc like I do... you'll just need to tell him/her the appropriate labs to run.
