Another Great Recipe

Here's what I had for dinner last night and lunch today.  I think it's the best soup I've ever had and it's chock full of veggies and calcium and protein.   VEGGIE CHEDDAR CHOWDER ONE WHOLE HEAD CAULIFLOWER CHOPPED UP TWO BUNCHES GREEN ONIONS, CHOPPED ONE RED PEPPER, CHOPPED ONE GREEN PEPPER, CHOPPED ONE PACKAGE SLICED FRESH MUSHROOMS SIX GARLIC CLOVES, CHOPPED

TWO CANS CHICKEN BROTH

6TBPS BUTTER 6TBPS FLOUR SALT AND PEPPER TO TASTE

1 QUART MILK

FOUR TO SIX CUPS SHREDDED CHEDDAR CHEESE.  PLACE ALL CHOPPED VEGGIES AND CHICKEN BROTH IN LARGE STOCK POT (IT'S OKAY IF THE VEGGIES AREN'T COVERED BY THE BROTH BECAUSE WATER COOKS OUT OF THE VEGGIES) AND SIMMER OVER A LOW HEAT FOR 20 TO 30 MINUTES.  WHILE THAT'S SIMMERING, MAKE A ROUX WITH THE BUTTER AND FLOUR, ADD THE MILK AND CHEESE TO THE ROUX AND STIR CONSTANTLY UNTIL IT THICKENS.  ADD THE ROUX/MILK/CHEESE MIXTURE DIRECTLY TO THE VEGGIES.  CONTINUE COOKING FOR TEN MINUTES UNTIL THICK AND CREAMY.   This would have made me happier than a pig in poop if I'd thought to make it and puree it when I was still on purees.  Seriously, it's so creamy, cheesy and delicious, you'll die!!!

That sounds delish! I'll swap out the chicken broth for veggie broth and make this next week.
