Hello - soon to be in Vegas for Vacation - Suggestions?

My husband and I are coming to Vegas October 12th - October 16th for a vacation and a wedding.  My girlfriend is getting married at the Excalibur, but we are all staying at Bally's.

Does anyone have any suggestions, or leads, or names of people we can talk to at the restaurants about eating there as a Bander?  I have substantial restriction so it takes me an hour to eat a salad, while my husband can hoover a plate or two.  I'm thinking the buffet would be great so that he is eating to his heart's content and can be patient while I'm trying to finish my food, but cannot see myself paying $21.95 or more for my single plate at buffet places.  I'd like to pick and choose what I'd like to have instead of having to order from the menu, and was wondering if they'd let you weigh by the pound and pay for what you get?

And of course, who do you recommend if there is a Lapband emergency?
