Quick & healthy recipes that are also toddler friendly?
OK, so Jeff usually does the cooking because I'm not that great of a cook (and he is an awesome cook and he loves it)... but now that he is on liquids I think that it's cruel & unusual to make him prepare food he can't eat - mostly I'm doing the liquids with him but we still have a 3 year old who won't be eating soup that often thank you very much! lol Anyway, I'm not that great or creative of a cook so I'm looking for quick and easy lunches that I can make for the two of us (or even just for him if it involves bread - I made a tuna melt for him the other day that he thought was ok) mostly we rely on grilled cheese or peanut butter on whole wheat with yogurt & apple but I'm running out of ideas and he's kind of a picky little guy!!
My kids love homemade p**za bagels. Sometimes they get tired of the tomato base so they dice up fruit and layer on their pita or bagel with peanut butter for the base. Tomato cucumber lettuce wraps are another hit!
Plus yogurt & granola parfaits are a great treat. Just layer in a parfait cup with fruit, yogurt,granola, raisins, etc. (If your son is a little tired of the tart yogurt, you can mix it with ff cool whip to make it a dip for fruits & veggies).

Just wanted to add a couple more ideas-
Will he eat Taco meat- then put it out for him to make his own and do his own toppings- you can eat that too just skip the tortilla- if you dont do hamburger- you can do it ground turkey or ground chicken even fajitas are great for kids to put together.
My daughter use to love when I would flip meal times around - like breakfast at supper time- Pizza with ham and some pineapple and lots of cheese which of course she put together for breakfast!
She also loved when I made anything in shapes- cut a bagel with a large flower cookie cutter- cooked an egg inside a cookie cutter- cut toast shapes- I would do it with melons too- she always loved the ol' stand by stuff like - fruit shapes I would create and make diff types of yogourt dips or healthy dressings for veggies.
She loved salad from a young age - caesar if you can imagine but it was because we let her make it - she is a cheese hound always was - so I am sure there were salads that she made mostly some salad dressing and cheese - but I also did real bacon for it or chicken pieces. Tried to show her how we could make healthier croutons but taking the left over grained bread and let it dry out cut in pieces.
I am not the chef in this house either - hubby enjoys it and is best- I used to cook and bake but then again I used to be 300 lbs lol- since WLS I dont like to cook or be around food - no interest - I cycle through food get fixed on a certain dish and keep eating it to death then move on - sometimes I will get creative but its a rare moment.

Tried to reply to this last night but I don't know if it was eastlink, or the wind, or what, but I couldn't seem to do anything!!! Anyway, the cookie cutter ideas are awesome - all of them - he is at the age where that is all great & he is loving making shapes with the play dough so I'll bet that will go over big! We've tried lots of salads with him but he mostly just picks out the cheese & croutons! lol
I am so thankful that Jeff is the cook because if it's left up to me I like it quick and easy which is definitely part of the reason that I ended up at 360lbs - it's a lot easier to grab a big mac on the way home from work than it is to go home and make yourself a decent dinner (Jeff was in the navy so he was away for weeks & months at a time which left me on my own - we didn't have children at the time so I did the easy & very unhealthy thing most of the time!!) Things are a lot different now - not only would I not feed that to my son, but I will no longer feed it to myself either :))
