Easter Leftovers

Found a great use for some leftover asparagus quiche from Easter. I scooped out the egg and cheese filling (with the asparagus bits) and heated in the microwave.  I left the pie crust behind.  It was delicious. It settled well in my pouch (4 oz max).

that sounds great.  I make my own crustless quiche.  I use small round pans that I got from Shaws.  They are only about 4" in diameter, and 1 1/2 " in height.  I mix eggs, cheese, onion bits, and anything else I want, and then bake.  Great single serving size, and I can make several different varieties to please everyone!!
