Edemame salad
I made an edemame salad yesterday and it is yummy. It even looks good. I have posted a picture of it on my oh.
The recipe is as follows.
1 bag frozen edemame
1 can black beans, rinsed
Sundried tomatoes (or you can use sundried tomato dressing)
roasted red peppers
corn (small can)
white balsamic vinegar
basil
Mix the edemame, beans tomatoes, peppers and corn together. Add vinegar and basil to taste (about 1/4 cup vinegar and 1- 2 teaspoons basil). Cool and enjoy. I saw the salad in hannaford, tasted it and loved it. It was $4.99 a pound though, so I jotted down the ingredients, and went from there.
I might even make it for a party and see what happens!!

I made the salad last night. OMG it is so delicious! I added a little salt, pepper, garlic powder and red onion to mine. Also, I didn't have white balsamic, but I have some really good stuff that my Mom gave me for Christmas that's dark from Fiddle Head Farms. I used that, and it didn't matter. I really loved it and will probably make it all the time. Thanks so much for sharing your recipe!

You are so welcome. I think you could possibly add so many different things to this that it would not matter. I liked it because I could control the amount of sodium that went into it where I cannot do salt. I have yet to try it on my husband, but I have it at work, and trying to convince my boss and co-worker to try it.
