Thai Pasta with Peanut Sauce
Thai Pasta with Peanut Sauce (Diabetic Cooking magazine)
¼ cup evaporated skimmed milk
1 TBSP plus 1 ½ tsp creamy peanut butter
1 TBSP plus 1 ½ tsp finely chopped red onion
1 tsp lemon juice
¾ tsp brown sugar
½ tsp reduced sodium soy sauce
1/8 tsp red pepper flakes
½ tsp finely chopped fresh ginger
1 cup hot cooked whole wheat spaghetti
1 tsp finely chopped green onion
In medium saucepan combine milk, peanut butter, red onion, lemon juice, brown sugar, soy sauce and red pepper flakes.
Bring to a boil over high heat, stirring constantly (about 2 min). Reduce heat to medium-low. Add ginger; blend well.
Add spaghetti to sauce, toss to coat. Top with green onions to serve.
Makes 2 servings: Calories 187, Total fat 6g, Sat fat 1g, protein 9g, carbs 27g, cholesterol 38mg, dietary fiber 3g, sodium 85mg.
NOW – my measurements didn’t change but, I used:
Simply Jiff (reduced fat PB)
Whey-low brown sugar
Hoisin sauce (I was out of soy sauce)
It was really good!!!!! But I found I had to add a little bit more evaporated milk. I think the fat free milk changed it some and required a little more.
