How has your cooking changed?

I'm glad that you liked the Chicken Corn Chowder and I'll try to post other similar easy to make items.

If you like/want 'greek yogurt', but can't get it at your local grocer, you can make it yourself easily, by putting in a strainer lined with a coffee filter overnight. The volume should reduce by half and become as thick as sour cream. Be sure to put it in the refrigerator while you are straining the liquid.

More easy recipes sounds great, Barb!  Easy is my middle name - wait a minute, that didn't sound right.  LOL!  You know what I mean!

I'm not a real big fan of yogurt in general.  I just eat it because I feel like I "need" it and if I'm going to eat it I might as well get the biggest bang for my buck, you know?

I'm not a big yogurt fan either, but Judy uses SF vanilla pudding in her greek style yogurt and says she really likes it. I'm planning on giving it a try. Other than that, I tend to use it more as an ingredient than the main attraction, if you know what I mean?

I go back and forth when i think of cooking... Sometimes i think i've always "cooked healthy" because i've always included veges, and salads in our meals.  But then i think of the quantities of butter, fat, gravies, cheese, etc.  that i used to use I guess it wasn't quite so healthy... Geee, do you think that's one of the many reasons i got so darn fat!!!

I try to have a home made meal 4 or 5 times a week... but i don't actually cook that often.  With both hubby & I having had RNY, and my background of cooking larger quantities, i seem to be able to cook a couple of times a week, freeze a good portion and still have enough for a couple of meals... Ok, i admit it... i've pretty much gotten lazy!!!  I've been cooking FOREVER!!! and i really am tired of figuring out what to have and how to fix it to make it different.  I don't enjoy it much.  I just do it because we have to eat.

I use the crockpot alot, i also use cookinglight.com, and i love to get recipes from all of you here at OH.  In fact i got my favorite white chicken chili recipe here from someone...

I use alot less fats, very rarely cook with butter.  I use mostly chicken and fish now.  Our beef consumption has dropped down to about once a month from several times a week... we used to buy mass quantities of beef!!!  I like the foods i eat now, rarely crave red meat and don't seem to miss deserts.  Although i do usually keep SF popsicles and maybe a WW desert or two in the freezer for hubby.

I've just recently bought a couple of WW Smart ones dinners, and i've used them once or twice.  We try to stay in that healthy range... so far it seems to be working pretty well for us.

I've done a mac n cheese with Barilla's Pasta plus that gives me the protein and then used the cheeses and low-fat greek yogurt. It really does come out, providing a lucious, rich and creamy dish that satisfies the carb monster that lurks within.

Barb - I would love to have that recipe - like you said it can satisfy my carb monster but in a much more protein oriented way.  It sounds like it won't taste like a "diet" dish either so hopefully the family would take care of it quickly so there wouldn't be too many leftovers!  :)

I'd like thaat recipe too.  I'll have to check but I don't think my local store carries Barilla plus either.  I need to shop away or move, one.
