Today I did a hot Queso Dip as a demo OMG it is to die for and sooo easy.
Keep in mind I did mine in a skillet because I needed to keep it warm and feed about two hundred people.

One 10oz Velveeta Cheese
1 10oz can of Ro Tel tomatoes and green chilis I used Mild
Cut up the cheese into chucks place in a microwave safe bowl add the tomatoes and then microwave till melted.

At the store I served it on top of chips but it tase wonderful on top of beans and I used celery for dipping and it was great

I have very fond memories of this dish from my Great Aunt... Just be careful because it's FULL of FAT... That said, it's nice to have a little indulgence now and then as long as we plan it in.

Thanks for triggering the fond memories.

I always record my intake every day.
After looking over my demo paper work some of the highlights of the products states Velveeta 1/3 less fat and calories than cheddar cheese.
Velveeta has just 6 grams of fat and 80 calories per serving.
Cheddar cheese has 9 grams of fat and 120 calories.
Still moderation is always the key to any foods especially those who have wls.

Hi Annie,

You are right moderation is the key to it all and something that I am finally developing. I know that Velveeta has a lower fat content that regular cheese, but it's still a high fat choice and I just meant to give others a heads up that they should be aware... So, it might be an okay choice once you've reached a maintenance phase and have learned to manage moderation, but it would not be a good choice for anyone who is in their weight loss phase.
