Yummy Recipe

 I tried this over the weekend and it was yummy.  I used left over Rotisserie Chicken and turned it into a higher protein entree.  This is good for a soft foot item.   If you wanted to fix it without Chicken you could add unflavored protein powder to up the protein. 

Spaghetti Squash Alfredo.    1 large spaghetti squash   1 jar of 5 Cheese Alfredo Sauce   1 Can of Mushroom Slices and Pieces

Bread crumbs

Grated Parmesan Cheese  
  • This makes a side dish. To make this an entrée add left over chicken breast cubed or about 1 large can of white chicken breast broken up into large pieces.
Prepare spaghetti squash by cutting it in half (hack saw may be needed), removing seeds  and placing cut side down in baking pan that has been filled with about an 1-1.5 inches of water. ***** the shell of the squash with a fork.   Bake at 37% degrees for one hour.  Take out of oven. Pour off water and allow to cool.  Use a fork to rake over the inside flesh that will flake off in strings. It looks just like spaghetti.     Mix the spaghetti squash strings with all of the above ingredients. Place in casserole and top with bread crumbs (Italian is very nice) and a sprinkle of grated Parmesan cheese.   Place in oven at 350 degrees for 30 minutes.

Hi Ruby,
This does look wonderful.
I have never known or should I say tried cooking spagatti squash before going by your instructions it looks very easy.
I am going to give this a try tomorrow night.

That sounds so delicious! 

I've been a huge spaghetti squash fan for a number of years.  To save time, I nuke mine in the microwave.  Put the halves in a glass dish face-up with a bit of water, cover with plastic wrap, start with about 8 minutes on high and then may need to add another 4 minutes or so.  Just keep checking with a fork. 

I have never done it in the oven so I will keep that in mind when I'm not in a hurry.  (And when does that ever happen anymore?!  lol)

If you have any more recipes using Spaghetti squash feel free to share. I am so loving this type of vegetable.   I can't believe I waited 60 years to try it.
