You have so much more restraint than I... I used to hop on and off that darn scale 10 times a day... Okay, maybe that's exagerating a bit... but somedays I'm pretty sure it was accurate. It nearly drove me nuts until I started just 'charting' the weight on anniversary day of my surgery. My deal with myself was that I could get on and off the darn thing as much as I wanted, but not to pay much attention to it except once a week. That helped me... Sounds like you are ahead of the curve figuring that out!
Re: eating to fast, too much... etc. It really is a learning thing and you are still very early. Will you ever learn. Yes, but it will take time. With time you will learn the size of our pouch a little better and as the swelling goes down and your pouch size enlarges a bit, you won't be quite as restricted. Right now, you probably have a window of one or two bites than can 'send you over the edge.' Also, realize that the nerves in your pouch are probably still healing, so you might not be getting the signal quite as clearly now as you will as your pouch heals and matures. Later, the 'tolerance' won't be so tight, but you will have learned to slow down and read the signals your body is sending most of the time ;-)
I have to admit to still have to 'learn' up to through my first anniversary... not nearly as often, but I'd still get caught short now and then. Now, I have to say that I can't really remember the last time I ate myself sick.
It will get better. I promise.

As for eating too fast, I hope you are right and I do get better at it. I did notice that I do eat less when I eat more slowly. By the time I am ready for my last coulple of bites, I realized I am content with my food amount. I suppose that is the same thing as being full. To me in the past, being full was over full and I am not sure what just full is like.
It's a learning process and to be honest, what seems just right at one meal, might seem like too much at the next... even with the same thing. Just keep working on it. You'll eventually learn that it's not your eyes that dictate the right volume, but your sense of fullness and it sounds like you are beginning to learn that fullness doesn't mean overful... If you overfill the pouch, you know what happens.
