I pulled out some of my old low carb cookbooks from when I used to do atkins. I noticed that obviously they have low carbs, lots of protein, but also a lot of fat. For example, one of the recipes that I thought sounded good was Chicken Cordon Bleu Roll- ups:

1 Tbs. of white wine
12 slices of swiss cheese
6 boneless chicken breast halves
18 slices of boiled ham

Nutrition info: Calories 563
                         Protein 80g
                         Carbs 1g
                         Fat 23g
                         Sodium 2,382 mg

It says it makes 6 servings. Is this nutrition info. for each serving? That just seems like a lot of fat and sodium. I don't mean to sound dumb, but I need someone to explain why this recipe isn't a good choice. I thought chicken, ham, and cheese were acceptable after WLS.

Here's one more example I saw that concerned me: Seafood Crustless Quiche
1 Tbsp. butter
10 eggs
1c. light cream
8 oz. pkg. shredded reduced fat cheese
1/2 tsp black pepper
1 6-ounce can cooked crab, drained
1 6-ounce can cooked salad shrimp, drained
1/4 tsp tabasco sauce
6 scallions

Calories: 442
Protein: 33 g
Carbs: 3.5
Fat 32 g
Sodium: 605mg

Any advice would be greatly appreciated.

I did atkins under a physician supervised program. Yes these calories are 1 serving that is listed.

It was explained to me that yes atkins is high in protien but  it is very high in fat and calories. You can eat all the bacon, red meat, protien you want. I think that Atkins thought the higher in fat the more you would lose.

The reason this is not good is because it can make your cholestrol increase and increase your risk of heart attack.

You could take the second recipe and do it with egg whites and butter substitute or margarine.

The first recipe the boiled ham may be increasing the calories and fat.

The Southbeach diet is better because you eat carbs but its the right amount of carbs that your body needs. Also your blood sugar remains stable and you don't eliminate food completely like with atkins
