I'm eating again!!!
So, I had my two week appt yesterday and they approved starting soft foods. Last night I had southwestern egg beaters with a litle cheese and for breakfast I'm having cottage cheese. Any suggestions for this stage would be appreciated. I'm going to make some quiche today and I've bought some greek yogurt but not really sure what to do with it. I'm just excited to be able to chew something!
Google 'eggface' and go the blog entitled 'The World According to Eggface' She has a number of wonderful recipes that will help you along your journey from beginning well on to maintenance. One of our family favorites are the variety of takes on cottage cheese and ricotta cheese pancakes, both sweet and savory. She'll also have plenty of ideas on how to enjoy greek yogurt.

Shelly's Baked Ricotta
8 oz of Ricotta Cheese
1/2 cup grated Parmesan
1 large Egg, beaten
1 teaspoon Italian Seasoning
salt & pepper to taste
1/2 cup Marinara Sauce
1/2 cup shredded Mozzarella Cheese
Mix ricotta cheese, parmesan, beaten egg, seasonings together and place in a oven proof dish. Pour marinara on top and top with mozzarella cheese. Bake it in the oven @ 450 for about 20-25 minutes (best) or nuke it till hot and bubbly. I usually made it first in the oven and heated the leftovers in the microwave
