the Christmas QUICHE

Not Christmas turkey, not Christmas ham, YES, it' the year of the Christmas QUICHE! 

Yesterday I went to see my surgeon for my follow up and he said I'm ready for the (his) Level 2 diet, which is essentially eggs, cheese, yogurt, milk, cottage cheese, peanut butter.  After looking at the list my husband asked, "What's in quiche?"  I said, "Well, it's basically eggs, cream, and usually cheese, plus whatever else you wanna put in it."  So, we went to Harris Teeter and got me a quiche to have for Christmas dinner while the rest of my family eats their turkey dinner.  We found a quiche with no meat in it, since I'm not supposed to "go there" yet.  I'll either skip the crust or just have a little bite of it.

So, this will forever be the year of the "Christmas QUICHE." 

I can see me now, as I take a bite of the quiche and say, "Good white meat."  Then take another bite and say, "Nice gravy, mom."  etc.

Meredith - I make a crustless quiche all the time... eggs, cheeses (swiss or mozarella, parmesan), and add chopped mushrooms, different spices, broccoli, etc.  I have also used the real bacon pieces that come precooked in a bag in the salad isle.  Just spray with pam, bake for about 40 minutes or until the knife comes out clean... yummy and full of protein.

Well just be happy your DH loves you enough to eat a Christmas quiche.  Dean would probably look at me like Id lost my mind!  LOL  Enjoy!!

Oh no, I'll be the ONLY one eating the quiche.  The other members of my family:  mom, sister and her husband with his daughter, my brother and his girlfriend, and my husband will all be eating the traditional turkey, dressing, gravy, sweet potatoe casserole, etc.  I'll be pretending to eat turkey with my little bit of quiche!  Since I can only eat about 1/4 cup of food at a time right now, I'll have to share that quiche before it goes bad.

That is one of the downfalls of only being able to eat 1/4 of a cup at a time..  I have thrown away enough food in the past 18 months to feed a small family I am sure.. but I am thankful that I did not get those extra calories.  LOL  :)

 You'd fit right in at my family's Christmas celebration!  As long as I can remember, we've opened gifts Christmas morning followed by brunch of homemade quiche, hashbrowns and muffins!  :)  Enjoy!

quiche sounds good, enjoy.  I will have some broth. yummm  Yesterday I thought having this procedure was like getting a tatoo.  Once you get it, you are stuck with it.  I was a little unsure I did the right thing.  I am feeling a little more positive about it now.  Merry Christmas Meredith!

Update on the quiche:
I decided to try a little bit tonight and I was sorely disappointed.  First of all, it has LOTS of spinach in it, not just a few flecks, like I thought it would.  In fact, it's mostly spinach, so that's not enough protein, not even close!  Second, after I ate a bit it didn't seem to agree with me very well.  I had a semi-sour tummy for about 2 minutes.  Not bad, but not terrific.  So, I'm going to give the quiche to my family and let them have it for breakfast.  Since my Christmas Quiche is out now, I decided to make my own mini quiches in muffin tins with just eggs, cheese, and a tiny bit of finely chopped, sauteed pepper and onion for flavor.

The individual quiches sound pretty good.  You know, my mom used to make quiches and they were really easy.  Of course we would have to leave out the layered biscuits in the bottom of the muffin tin.  But she would crack 2 to 4 eggs into a 2cp pkg of shredded cheese and empty a can of green chilies, close it and squoo**** to blend it all together.  Cut off the corner of the bag and squeeze into muffin tins.  I may have to remember that when my time comes.  I love those things!!!
