Miniature Bran Muffin Recipe
We made this bran muffin recipe on Sunday into miniature muffins. I've been eating one in the morning and one in the evening the past 2 days. They have helped me to feel a whole lot better after being on an extremely low-carb diet without hardly any fiber to speak of. Our entire family is in love with these. Lil' man says they sorta taste like "gingerbread."
Miniature Bran Muffins
2 oz. All-Bran Extra Fiber cereal
2 oz. Raisin Bran cereal
2/3 c. non-fat dry milk powder
1/4 c. flour
1 tsp. baking powder
1 tsp. baking soda
3 tbsp. brown sugar (We used Splenda brown sugar blend substitute.)
2 tsp. apple pie spice
Pinch of salt
4 tsp. vegetable oil (We used canola.)
2 tsp. vanilla
1 med. banana, mashed (Hint: We freeze browning bananas in the peel instead of throwing them away, then use them for recipes like this!)
1 c. unsweetened applesauce
Numbers I came up with:
Calories: 55
Fat: 1.2g
Carbs: 10.2g
Fiber: 1.65g (Seems low, but has been enough to help me tremendously.)
Sugars: 5.6g
Protein: 1.65g

Mix everything except applesauce together. Add applesauce and mix until well moistened. Divide evenly into sprayed miniature muffin tins. Bake at 400 degrees for 15 minutes. Makes about 18-20.
