promised Blueberry recipe
Here is the recipe I promised to the support group which met tonight at NE.
Blueberry Crisp
4 c blueberries (I used frozen)
1/2 c splenda
2 tbsp cornstarch ( I used arrowroote)
2 TBSP LEMON JUICE
Combine above ingredients in bowl pour into casserole dish sprayed with Pam ....Preheat oven 375 degrees
topping
1/2c rolled oats (I used old fashioned oats)
1/2 flour..whole wheat (I used Fiber One Pancake mix)
1/2 splenda brown sugar (I used 1/4 cup +1/4c pure splenda to cut back on sugar and keep some of the brown sugar taste...you could use all splenda to cut out all sugar)
2 tbsp toasted walnuts chopped
6 tablespoons light margarine or butter (I used just enough to make mixture crumbly to cut back fat)
Mix the above together and crumble evenly over Blueberry mix.
Bake 45 min or until it is lightly browned
My figures may be off but I think this is a close nutrition breakdown.

You can use other fruit...I tried apples but added cinnamon to fruit and topping. The SF canned pie fillings work ok too.

Fruit crisp is one of my very favorite things to make for our family. I use fresh apples, peaches, pears...frozen blueberries, strawberries, mixed berries. The last one we made mixed apples that were starting to turn with the last bit of frozen strawberries.
I don't use cornstarch in my fruit or nuts in my topping (which I need to start doing...pecans would be great too!), but I do use whole wheat flour, 50/50 brown sugar/splenda, and Smart Balance in my topping like you do. Did you know you can nuke it in the microwave for 10-12 minutes and it comes out perfect?
I think everyone should know how to make fruit crisp! Cheap, quick, easy, delicious, and one of the healthier "desserts" you can make...thanks for sharing this, Myrtis!
