Another recipe

My family went ga-ga over this last night.  It is cheap, quick and easy...just my kind of recipe!

Chili Cheese Cornbread Bake
2 cans Hormel vegetarian chili with beans
1 c Kraft 2% shredded cheddar cheese
1 box Jiffy corn muffin mix, prepared (uses 1 egg, 1/3 c milk)

Preheat oven to 400 degrees.  Spread chili in the bottom of an 8x8 casserole dish.  Top with shredded cheese.  Pour corn muffin mix over the top.  Bake 25-30 minutes. 

I'm guessing on the temp and time since I don't have the recipe on me right now.  Basically, bake until the cornbread is golden brown.  My picky 8yo, who protested even trying it, ended up asking for seconds and my "I hate chili" 20yo loved it too.  I'm hoping this is RNY friendly at some point down the road?  Would love to know if it is!

I know a cowboy that would love this!!!!!
If I were you go slow on any type of bread right after surgery.
I wass scarred to do any kind of bread for a long time and I am still leary of it.
