Four weeks out/Hard to find food
I am assuming that you are currently on a softfood diet meaning that it's restricted to things soft enought to be cut with a fork, no cruciferous vegitables, seeds or skins. Sooooo, let's see.
Bean based soups/Casseroles ...
If you haven't tried soups or cassoulets, made with beans and chicken, this is something that worked wonderfully for me. It allows you to get in great quantities of protien with the beans and the chicken is cooked so slowly and with so much moisture that it's very easy to handle.
Chili ...
I know it might seem counterintuitive, but Chili, in it's myriad of forms is wonderful when you are early in your WLS journey. Like the bean soups and casseroles, it provides great nutrition in a lowfat manner. Don't worry about the spicyness. If you liked spicy before, spicy now will be fine too.
Chicken ...
I know that many have issues with this and I have to admit to learning to tread lightly, but I have to say that my grandmother's recipe for fried chicken saved me. This is because I remembered that she used to have me marinate my chicken in buttermilk to ensure that it would be moist and tender. Remembering gramma's suggestion, I decided to try it with skinless, boneless chicken and it works! Just marinate in buttermilk, then prepare as usual. You will have melt in your mouth, tender chicken. This works great with pork chops as well. Early on, I also would pound the chicken or pork cutlets to about .25 inch thick. This combination of marinading and mechanically tenderizing was a big help.
Cottage cheese pancakes ...
These were a delightfull find! If you go to http://theworldaccordingtoeggface.blogspot.com/search?q=cott age+cheese+pancakes you will find a whole host of wonderful recipes for these lovely little delights. You can have them as a savory or sweet something. While I don't need to have them anymore, I love to and so does my daughter!
Speaking of eggface, you should consider bookmarking her blog. She puts together some wonderful things that you can truly enjoy!

I also forgot to mention seafood. If you haven't ventured there, try it! You'll likely find that shrimp, crab and fish that flakes easily when cooked, like salmon, sole, and cod are going to go down very easily. I nearly lived on shrimp ****tails! If you have a Trader Joe's nearby, you can get their house brand of ****tail sauce that is wonderful and only has 1 gram of sugar, so you can enjoy without worry or guilt.
Keep working on it and remember what doesn't work this week, may work in a week or two.
Hang in there, it gets much better!
