It's truly a learning process. Measuring your food will be a big help, but it's really going to take time. I still misjudge sometimes and I'm almost 16 months post-op. The hunger fluxuations really vary from person to person. I know some folks say that they just never got hungry and/or the only had head hunger. I had 'real' hunger from early on, but as you say it varied. I also found and still find that sometimes I seem to be able to eat more than others. I'm not sure why that is, but I do try to stay aware of what I'm eating and how much. I track what I eat on www.mydailyplate.com and that has been a big help to me in the longer run. It's helps me to see the 'value' of what I eat and how much I'm consuming. To be honest, early on and now I have to be sure that I'm eating enough; not something I would have ever thought I would need to do.
Keep measuring and tracking what you are doing. You'll find that you'll be able to get a better visual handle on what an 'appropriate' proportion is for you with time and practice.

Sometimes I fill up really fast and can wait a little while and can take another bite or too.
I never try to force more than I am comfortable doing.
Yes I can look at a certain amount of food and think I can eat all that.
Nope no way no how that is my old way of eatting.
