NEED IDEAS

Hi everyone it has been a while since I have posted but I am doing great.  I feel so good these days, I am down 68lbs since surgery.  I do need a little help though.  I would like your input on some ideas for lunch.  I work in an office and would like to come up with some new ideas for me to carry for lunch so that I don't have to go anywhere to eat.  I have never been much of a left over person but I am up for any ideas.  Thanks for any input!!!!

I am very boring.   I take 1/2 cup of cottage cheese and baby fruit or a peach.  I mix that up and do take yogurt once in a while.  I can't do bread so sandwiches are out.   I will be anxious to see what others do.

I love chicken, and it loves my pouch so I very often take 2-3 oz of the Perdue Short Cuts chicken breast (I buy the boxes of 3 packs per box and BJs for around $10.00 bucks then weigh and measure the chicken out into baggies so I have them ready to go).  Sometimes I just heat the chicken and have it with some type of fruit (mandrin oranges - LOVE these, peaches, few grapes, etc.)  Other times I heat the chicken or leave it cold and put it over shredded lettuce with grated cheese, small pieces of cucumber and a slice of bacon I have microwaved and broken up - add a little dressing and eat til I feel full and stop.  I also take cottage cheese and just put salt on it or add SF strawberry jam;  once in a while I will buy Taco Bell pintos and cheese and heat that up; sometimes I just have a double scoop protein shake ****ep a blender at work to use).  Other times I take the same salad mix mentioned above and add cut up ham and turkey breast for a little chef salad, always being sure to eat all the protein and leave the other stuff when I start getting full.  Sometimes I just want SF vanilla pudding with cookies and cream protein powder mixed in.

I also take a lettuce leaf and wrap ham or turkey breast inside and make a roll up and have a dill pickle on the side.  I also make and take homemade chicken salad and tuna salad (using Mt. Olive pickles made with Splenda) with maybe one pack of 2 crackers and some fruit (usually 1/4 cup of the fruit).  Sometimes I even put the chicken salad or tuna salad over the above mentioned salad mix.  Oh, Egg salad made the same way (pickles and low fat mayo) is good with the cracker. 

I have only started with the crackers, no other breads, and I can handle them well maybe 1 and no more than 2 times a week.

I find I must prepare ahead of time and portion it out so that its quick and easily portable.

Love your lettuce wrap idea.   Can do with ground beef or chicken, cheddar cheese and one or 2 low fat nacho chips with salsa for a low fat taco..   You really have my mind thinking now ....thanks a bunch as i am tired of being bored. 

I am gonna check if Costco has the short cuts too as i have been buying grilled chick at trader joes and that is pretty expensive!

If you like pepperoni I would suggest taking some turkey pepperoni and cheese cubes.  The pepperoni is good nuked for about 30-45 seconds.  This makes it crispy and satisfies the urge to crunch on something.  I also do string cheese, cottage cheese with fruit, homemade egg salad, tuna salad, and chicken salad with crackers. Make a "lasagna" type meal with ground hamburger or turkey meat, NSA spaghetti sauce, ricotta cheese, and mozzarella cheese. Just layer the hamburger/turkey cooked with the sauce and the cheese in a dish and you are good to go.  Easy to make and take and full of protein too.  I also do a deli pinwheel type thing that's real good.  Take thin sliced deli meat (I usually do turkey but any type you prefer will do) and spread low fat or fat free cream cheese seasoned with some powdered Hidden Valley Ranch salad dressing mix and spread on a thin tortilla, add whatever veggies you like or are allowed (chopped up tomato and lettuce are usually what I do) and roll up and slice into little pinwheels.  These are quick and easy and so good!!  Hope these ideas help!
