Recipe: Simple Shrimp & Grits

Since I mentioned it in the breakfast discussion, thought I would share this throw-together-myself recipe inspired by my favorite dish at Fatz Cafe.  It's great for any meal of the day.

1.  Cook grits in microwave.
2.  Saute some chopped green onion, a small garlic clove, some baby shrimp and bacon bits (I use Bacos) in a bit of regular Smart Balance in a skillet.
3.  Add this mixture, along with some shredded low-fat cheddar cheese, to the cooked grits.  Mix together until cheese melts.
4.  Optional:  Fatz tops theirs with burgundy mushroom gravy.

This is to die for in my book!  It is also super easy to make a small amount for one person or a large amount for a family, and I do like to eat it as a leftover the next day.

Yum! Thank you for the recipe. I will definitely have to try this. Sounds like it would qualify as a "soft food" to me. August 15 here I come! (That's when I can start eating soft foods.)

Got a lap band in 2008. Tried hard, but didn't lose much weight & developed swallowing problems. Fought my insurance company for almost a year & finally had a band to DS revision on 5/11/12. Have now lost 125 pounds. Yay!

After my LapBand surgery, I chopped the cooked shrimp and fixin's in the food processor (Magic Bullet) for a few seconds and made a Shrimp and Grits soup, which was really, really yummy and perfect for the soft stage.
