Yellow Squash Recipes??

I have a ton of yellow squash that was given to me this weekend... was wondering if anyone has any really good recipes. I took one and sliced it real thin and put it in a baggie with 1/4 c of flour and sprayed a cookie sheet with pam and then layed them on the pan. I then sprayed more pam on them and cooked them.It was just like fried  squash!! YUMMMY!! But I would like something else to do with them if anyone has any ideas. Thanks  Melissa

I do it as a quick saute.

1/4 c. onion diced

1/4 mushrooms sliced

1 cup squash diced

Dash or two or Mrs Dash

1 tsp olive oil or spray the pan w/pam

chicken stock

fresh herbs, minced ... i.e., chives, parsley, etc...

parmesean cheese

fresh ground black pepper

 

Add oil/pam to hot pan. Add onions and mushrooms. Saute 'til browned. I often add chicken stock during the cooking process. Add squash and cooked until just browned and still crunchy. Add herbs and seasonings. At the last minute toss in the cheese. It will brown and become slightly nutty.

I like to micro wave them to a soft state and then mash them up with a little garlic and smart balance buttery spread. Yummy

I dice them up and put them raw into my salads.

I take them and zuchinni and slice them (not too thin), spray the pan with olive oil, lay  them and sliced zuchinni and pieces of onion in the pan spray with olive oil salt and pepper to taste and bake on 325 - 350 degrees until done.  I like them to turn a little brown.

Slice the squash a bit on the thick side brush with olive oil salt and pepper to taste cook directly on grill B
