Any other low carb recipes?

Sorry I haven't posted in a while. I've been swamped. Hope everyone is doing okay. Anyways, my surgery is June 10th and I've started my pre-op diet...basically, Atkins. I went to the store and picked up some nuts, cheese, pork rinds, and sugar free jello. I also picked up the Atkins book from the library, but the recipes seem involved and call for so many specialized items. I don't want to spend a fortune just for a couple of weeks' worth of meals. So far, I've done well, but my creative wheels don't seem to be working right now...Any suggestions for snacks and meals would be greatly appreciated. Thanks!
PS - I also have to keep my husband in mind during meal time and he is on the "eat anything I want" diet.

I don't know if you have a Sam's membership, but there are some staples there I couldn't live without..
I get flash-frozen atlantic salmon. It's frozen in individual fillets. Defrost in some warm water, then cook it in the microwave. Takes 7 minutes total to prepare, is low in carbs, super high in protein, easy to fix, and has *good* fats.
I also get flash-frozen mesquite chicken fillets from Sam's (I tried Tyson's version.. they sucked). 160 cals per fillet, 30something grams protein, low fat, and cooks in microwave in 2 minutes.
You could cobine both of these items with rice, or veggies for hubby and you concentrate on the protein.. or whatever.
Also, fage or oikos (HT has both) are low in cals, low in carbs, and great in protein. You can use it as yogurt (add some splenda and or sf preserves), or as a replacement for sour cream.

You really don't need recipes with Atkins. Just eliminate (virtually) all white carbs like bread, milk, rice, pasta, flour, and you can cook things any way you like. There is an Atkins support website as well. But it really doesnt involve any fancy recipes. And don't forget you can do cream in your coffee instead of milk! basically stick to meat, veggies, dairy.... so 'tacos' is a good choice - just sans shell... taco style meat, cheese, sour cream, salsa etc... you could put it on a salad like taco salad (I know atkins limits specific veggies but since you are just doing this pre-op I wouldnt think what veggies you ate would make such a huge difference?)
You could do sloppy joes... again meat and the sloppy joe mix
burgers sans bun... put on cheese, bacon... you could do many variations - mexi-burger, italian burger, greek burger etc
buffalo burgers
chicken burgers
chicken... so much you can do with that... 'mock' chicken parm, buffalo chicken, grilled chicken, bbq chicken etc (just get low sugar sauces etc), rotissery chicken breasts.. chicken caesar salad
tuna - mix with mayo, celery etc and scoop up with celery or carrots... or just eat plain
make breakfast - eggs, cheese, veggies, sausage, bacon
'pizza'... cheese, sauce, toppings.. just no crust!
noodless lasgana using baked zucchini slices instead of pasta
as for snacks - cheese sticks, pepperoni chips (take pepproni and bake or mico till crispy), spinach dip scooped up with celery/carrots, celery and cream cheese, onion dip and veggies (sour cream and onion soup mix) SF jello pudding or SF jello w/cool whip, SF ice pops, SF fudgeciles
First visit to surgeon - 288 ~ bmi 45.1
2 week pre-op 252 ~ bmi 39.5
Total lost - 153 Since surgery - 117!
Goal weight - 155 (mine) 180 (surgeons)
Current weight - 135 (2020 I lost 10lbs due to dedicating myself to working out more and being in better shape)
1/14/2025 still maintaining 135 :-)
