Another No Carb recipe!

Hi Team! Some of you may know that I have been big on cutting down significantly on my carbs as I am struggling to lose these last 20 lbs.  Actually, I haven't been struggling at all any more thanks to having cut down on the carbs.  I never really did any of the nasty white carbs like bread and pasta, and had converted to whole grains whenever I did eat anything of that sort.  But quite recently I just rededicated myself to an Atkins Induction-type of meal plan as it has always worked well for me in the past and seems to be the key to the long-term success of folks like VitaLady on the main board. I have become a "lurker" on the WLS "grads" Yahoo group and am learning a lot!  And picking out recipes.  That Muffin in a Minute recipe with the flax meal that I posted a couple weeks ago is one of the winners for me.  12 grams of protein, 8 grams of carbs, 8 grams of fiber (meaning zero net carbs!) wrapped up in a very tasty package that lends itself nicely to variations and satisfies any hankering I might have for something "cakey" without the carb triggers.  AND it toasts beautifully!  Oh and it'll make you regular!  LOL Well today's no-carb discovery is:  (drumroll please!)     CHEDDAR CHIPS!  Just take about a tablespoon of shredded cheese (your choice) and drop it on a waxed paper sheet or some baking parchment, and nuke it for about a minute til it turns golden.  Crispy, tasty, full of protein, and NO carbs!  The nutes are easy to figure:  measure out a cup of shredded cheese, figure out the nutes from the package of cheese and then your per-chip nutes are dependent upon how many chips you can make out of a cup.  Another craving satisfied!  Crunchy and a little salty and very flavorful!  Hope this helps!

Continuing the drum roll.  That is great.  I am a cheddar cheese fanatic.  I'm also a crunchy/salty snacker.  WHOO HOO!  This will really feel that void after surgery...hmmmm and maybe right now too!

Does this work with the lowfat cheese as I know it doesn't melt as good?   Sure sounds good and i wanna make sure i do it right! Thanks, Pam

I don't know about the low fat cheese because I don't buy it.  However I would be surprised if it didn't work ok.  This is pretty hard to do it wrong!  Try making one and see how you like it.
