RUN....do not walk.....I repeat.....RUN....to your local WalMart and get you some of these:

A few of these with chicken/tuna/egg salad is divine! And 15 is a BIG serving, so you could probably have a lot less and cut down on the carbs and calories....This is one of the first cracker alternatives I have seen that tastes yummy!
Hmmmm.... Sounds like I need to stop there tomorrow.

I shred 1 block of extra sharp cheddar cheese, 1 block of mild cheddar cheese and mix lightly in a bowl with my hand.
Then I add Dukes Mayo to it.. just enough to make it moist. I dont like runny pimento cheese.
Then I add a jar of diced pimentos drained.. salt and pepper to taste.
No real recipe.. just throwing stuff together.
