VERY Low Carb Recipe for Muffins
I have to share this with you as I just tried this recipe and it is delicious! They are called "Minute Muffins." You can play with the flavorings, of course, with no significant change in the nutrients (unless you add a handful of chocolate chips!).
1/4 cup flax meal (can get it at WalMart, Hodgson's Mill Milled Flax Seed)
1 egg
1/2 tsp baking powder
a pinch of salt
I added a tablespoon of Torani SF Brown Sugar and Cinnamon syrup, you can use a packet or 2 of Splenda and a sprinkle of cinnamon.
I also added a tablespoon of SF applesauce.
Mix this up with a whisk. Pour into a greased (Pam) 3" ramekin or custard cup and nuke on high for about 90 seconds. Let it cool for about a minute after you take it out of the custard cup It will just pop out.
These are heavenly and sure do satisfy a craving! A nice breakfast alternative. However I can't eat the whole thing at one sitting.
Cals: 190/ Fat: 14 gr/ Carbs: 10 gr (of which 8 are fiber!)/ Protein: 12 gr.

I've eaten them and they are wonderful! If you leave out the sweeteners (Splenda and any flavor syrups, and nuke it in a sandwich-sized rubbermaid container (or similar sized container about the size of bread), it comes out like a slice of bread. Those are even better toasted. After popping it out of the container and letting it cool, put it in a toaster oven or toaster - yum! Especially good for those of us who are trying to go low carb.
