Egg crepe question

Ok I have a recipe for egg crepes and use them to make many things. The recipe came from my nutritionist and it says to use 1/2 of an egg beater carton. Well my husband bought the groceries and he bought these little egg beater things (says 2 servings per container). I was wondering if anyone knew how many servings are in the cartons?  Thanks Melissa

Hi Melissa -

They come in different sizes ... i.e.,

  • 16 oz carton with resealable pourspout (refrigerated)
  • 32 oz carton with resealable pourspout (refrigerated)
  • 4 oz cups (three-pack; refrigerated)
  • 8 oz cartons (two-pack; frozen)

but according to the nutrition facts on the eggbeaters carton a 1/4 cup is a serving ... I'm thinking that would be 1/4 of the milkbox size cartons.

I'm sorry I'm not much help. I do know that when I make up my cottage cheese pancakes I use a 1/4 cup measure of the eggbeaters and 1/4 of the cottage cheese which makes up a 1/2 cup serving, so maybe she's thinking in terms of a half cup...

I'm just rambling here ... I think you'd better double-check with her.

Thanks Barb for the input. Yeah this recipe is 1/2 egg beater carton, 2tsp flour and pam spray. I have the pack that comes with 3 small containers. I think maybe one of those might equal 1/2 of the small carton. I dont know but thanks for your input. Melissa

Melissa -

The 3 packs are 4 oz, so use a whole one of three packs to get the 1/2 cup measure. You should be good. I do something similar, but use 1/4 cup of the egg mixture w/1/4 cup of cottage cheese and a dash of vanilla and cinnamon. mmmmm. They cook up sort of like eggy pancakes. They are so good that my daughter loves 'em. Enjoy.

That  sounds really good. Could or do you use a sf syrup on them? I know my grandma was a diabetic and she used to have cary's sf syrup in the fridge all the time. Back when I was a kid I didnt like it but it sounds pretty tasty now lol. Thanks for the help. Melissa

Hi Melissa -

I do use sf syrup sometimes. Try some made w/splenda ... they are pretty good. I also have used a bit of sour cream w/splenda and a touch of lemon or vanilla .... mmmmm good!

When you make them, be sure to add the flour, it makes them a bit cake like instead of being like omlettes.
