Need food ideas!

I never thought that it would be hard to come up with what to eat once I was able to eat again. Boy was I wrong! Since everything at this stage should be moist and fork tender I'm really struggling. What's your favorite food or recipe? Any ideas are welcome. :) Now that I can eat again I sure miss Aunt DeeDee's recipes of the day!!! Becky

Hey!  It is hard to find things.  I don't know if you like things like this, but it was my easiest thing that I ate for a while.....and I still crave it.  I boiled chicken thighs, cut it up really small, added mayo and Mrs. Dash southwestern chipotle.  It was like chicken salad.  Sometimes I added cottage cheese to it too.  I also ate a lot of refried beans.  Again I don't know what you like.  Hmmm.....I am trying to think of something to help you.  I did well on soups.  If I think of something I will let you know.  I understand what you are saying, it is really hard.  I have noticed that things I used to love, I don't even like them anymore.

Becky, It's still really tricky at the stage you are at right now... Try tuna/crab salad with DUKE's mayo or different types of fish. I LOVE tuna steak, so I would also order that if we went out to eat. I still haven't quite figured out how to cook it myself at home... :(  Some chicken dishes were okay-- some where not. Just remember to CHEW CHEW CHEW... it was a while before I tried steak-- I actually just started eating it every once in a while in the last few weeks or so... I think I pretty much lived off chicken and seafood those first few months.  Also, refried beans from Taco Bell are great for lunch. Now I can eat a chicken soft taco (take some of the wrap off) with just chicken and cheese and about 1/4 of the beans and I'm full!!! I'm sure you could do the beans now and it would be something "different"... You can *try* ham and cheese (deli style)... I wouldn't do bread just yet (as in wraps-- I think it was more like 2-3 months before I could do those)-- REAL bread is still hard as it fills me up fast. I try to eat dry toast or something if bread is needed.  Soups are always good. I love McAllister's cheddar potato soup and french onion from Panera... You can even ask for JUST MEAT and CHEESE at Panera so that is another option for lunch. We are doing more cooking at home now that I'm not so limited to what I can eat, but hopefully this will at least give you SOME ideas... just eat SLOWLY and learn to listen to your pouch when it says "I'm done"- -don't force it or you will regret it. :(

I'm a Bandit, so my food restrictions are a little different, but basically everything does have to be fork-tender (and oftentimes minced).  Here are a few things that I've been enjoying lately: SF banana cream pudding made with Light Silk Soymilk, mixed with some SF Cool Whip, some flavored protein powder, and a smidge of Philly Light Strawberry Cream Cheese, topped with sliced strawberries lots and lots of fresh fish from the fish place across from the NC Farmers Market (tonight was pistachio-crusted tilapia with a fresh mango salsa) a Thai chicken recipe I adapted, with shredded and sauteed veggies, some peanutbutter, minced chicken, garlic,and green curry paste shrimp and grits soup, wth minced turkey bacon and shrimp (it's almost a bisque, nice and creamy and smooth) sliced cucumbers, multicolored cherry tomatoes, and feta cheese with a sprinkle of lemon juice breakfast burrito with Trader Joe's Low-Carb Whole-Wheat tortilla smeared with a little Philly Light Garden Veggie Cream Cheese and filled with a scrambled serving of Eggbeaters, some crumbled soy breakfast patty, and onion flakes a cheesy egg casserole made with Eggbeaters, FF cottage cheese, parmesan cheese, a smidge of Philly Light Garden Veggie Cream Cheese, shredded yellow squash, and soymilk red cabbage slowcooked with raspberry vinegar and chopped Asian pear What I really love about this stage is that I can splurge on quality over quantity.  Whatever I really want in terms of excellent nutritional quality is all mine!!   The freshest fish?  I don't need much, so I buy what I want.  And I have more energy, so my kitchen is cleaner than it has been in a long time -- and you know what they say: "A clean kitchen in an inspiration."
