(Today is also "Drink Wine Day" but for some, that would be EVERY day.)
I have made this recipe for clients for years and they all rave about it. I usually add a little more crab than the 4 oz. called for.
CRABMEAT STUFFED FLOUNDER
Serving Size : 4
Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- butter flavored cooking spray 2 t. reduced calorie margarine 4 T. chopped mushrooms 2 T. chopped green onions 2 T. cream cheese 1 t. minced fresh marjoram 1/4 t. pepper 4 oz. fresh lump crabmeat 4 T. soft bread crumbs or Panko 2 t. lemon juice 4 3 oz. flounder fillet 1/4" thick 4 T. shredded reduced fat cheese paprika
Coat non-stick skillet with cooking spray; add margarine. Place over MED-HI heat until melted. Add mushrooms and green onions; saute 2 minutes. Add cheese, marjoram and pepper; cook, stirring occasionally until cheese melts. Remove from heat; add crabmeat, breadcrumbs and lemon juice and stir well.
Spoon mixture evenly onto fillets; foll up beginning at narrow end. Secure w/toothpicks. Place rolls, seam side down in small baking dish coated w/cooking spray. Bake uncovered for 10 minutes at 350. Sprinkle w/cheese and paprika and bake additional 10 minutes. Remove picks and garnish w/lemon wedges.

STUFFED FLOUNDER
1 lb. flounder ¼ C. mayonnaise 1 can sm. shrimp 1 can crab meat 1 tbsp. butter 1/2 C. bread crumbs
Drain shrimp and crab meat and mix together. Add mayo, melted butter and bread crumbs to make a stuffing mix. Place mixture of shrimp and crabmeat on flounder and roll up. Secure with toothpick and place in greased pan. Sprinkle with fresh lemon. Bake at 350 degrees for 20 minutes. I sometimes add cooked spinach to the mixture and make a Stuffed Flounder Florentine.
