Now I know this wont work for all stages since its bread based... but you can modify to your taste :-) I am in LOVE with jimmy deans de-lites breakfast sammies but at $5 for 4 sandwiches I figured I could make them much cheaper. They also use full fat cheese so I figured I could cut some fat/calories there as well! I am at the point where I need a nice 'hearty' filling breakfast or I am just hungry all day long... these really fill me up! I typically end up eating a little more than half... or just using 1/2 of the enlgish muffin!
I puchased one of those egg thingies at Bed Bath and Beyond for less than $3 (for 2)... its the little round ring so you can make round egg patties - what an invention. Thats the only 'tool' you need!

I made a bunch of the egg patties on Sunday... you can add some veggies in there, and/or cheese whatever you like. Cook up the bacon/sausage. I make the individual sammies with the english muffin, either the bacon or sausage and put them in the freezer. At work we thankfully have a toaster so I toast the muffin and micro the egg/meat and put it together - super yummy, protein AND fiber packed! I dont have the nutritional info because Ive been lazy and not put it into fitday yet... the TJs enlish muffins arnt bad on the carbs - you could use just one 1/2 of the muffin if you want to cut back on the bread. The turkey bacon/sausage is low fat and depending on the egg/egg substitiute you also have little to no fat. (you can cook the bacon in the micro, on the stove or in the oven... I like mine chewy so I do stove top, the micro and oven make it crispy!)
If you want to be super lazy Wal Mart sells egg patties already made in the freezer section - they are with the morningstar farms/boca burgers and there were 6 in the bag for less than $4... each patty had 4g of fat in it but they are big - you could really cut in half and use it to make 2 sammies.... easy way to put together the sandwich if you dont want to cook!
I also like to make bfast burritos using TJs Lo Carb Whole Wheat wraps - they only have 6g carbs in it (and 4g fiber!)... they are thin and light so its perfect to use and not be too bread-y!
