Deeelicious breakfast options

Now I know this wont work for all stages since its bread based... but you can modify to your taste :-) I am in LOVE with jimmy deans de-lites breakfast sammies but at $5 for 4 sandwiches I figured I could make them much cheaper. They also use full fat cheese so I figured I could cut some fat/calories there as well! I am at the point where I need a nice 'hearty' filling breakfast or I am just hungry all day long... these really fill me up! I typically end up eating a little more than half... or just using 1/2 of the enlgish muffin! I puchased one of those egg thingies at Bed Bath and Beyond for less than $3 (for 2)... its the little round ring so you can make round egg patties - what an invention. Thats the only 'tool' you need! For my own version of jimmy deans b-fast sammies  Eggs - or egg beaters, or egg beaters whites, or egg whites Turkey Bacon or Turkey Sausage Patties Trader Joes whole wheat english muffins I made a bunch of the egg patties on Sunday... you can add some veggies in there, and/or cheese whatever you like. Cook up the bacon/sausage. I make the individual sammies with the english muffin, either the bacon or sausage and put them in the freezer. At work we thankfully have a toaster so I toast the muffin and micro the egg/meat and put it together - super yummy, protein AND fiber packed! I dont have the nutritional info because Ive been lazy and not put it into fitday yet... the TJs enlish muffins arnt bad on the carbs - you could use just one 1/2 of the muffin if you want to cut back on the bread. The turkey bacon/sausage is low fat and depending on the egg/egg substitiute you also have little to no fat. (you can cook the bacon in the micro, on the stove or in the oven... I like mine chewy so I do stove top, the micro and oven make it crispy!) If you want to be super lazy Wal Mart sells egg patties already made in the freezer section - they are with the morningstar farms/boca burgers and there were 6 in the bag for less than $4...  each patty had 4g of fat in it but they are big - you could really cut in half and use it to make 2 sammies....  easy way to put together the sandwich if you dont want to cook! I also like to make bfast burritos using TJs Lo Carb Whole Wheat wraps - they only have 6g carbs in it (and 4g fiber!)... they are thin and light so its perfect to use and not be too bread-y!

First visit to surgeon - 288 ~ bmi 45.1
2 week pre-op 252 ~ bmi 39.5
Total lost - 153 Since surgery - 117!
Goal weight - 155 (mine) 180 (surgeons)
Current weight - 135 (2020 I lost 10lbs due to dedicating myself to working out more and being in better shape)

1/14/2025 still maintaining 135 :-)

This is a great idea! I love the "round eggs" like that and cooking it ahead of time is such a good idea. I don't know why I never thought of doing it myself if we heat up the "store bought" stuff! Do you freeze them so they won't go bad before you use them?  Thanks for sharing!

I make up the whole sammie and freeze it - then at work I heat up the insides and toast the muffin... you could micro the whole thing but I like my muffin toasted!

First visit to surgeon - 288 ~ bmi 45.1

Thank you Thank you.  That sounds so good.  Breakfast has been one of my hardest meals to figure out.  Especially on the weekends when I cook a big breakfast for my kids.  I think they would like this too.  Thanks again.  Donna

Thanks for this!!  Breakfast is my hardest meal.  I never know what to eat and nothing ever sounds/looks good... With these in my freezer, it will make a good/quick alternative to my just grabbing some cottage cheese!
