gndhog3xtt.gif - 7.5 K Redneck Groundhog Take gun (.22 cal is good). Load with bullets and accurately fire at head [Ed. Note: We're assuming the groundhog's head, not your own]. Skin groundhog and gut him. Clean out carcass with waterhose. Cut critter into quarters. Make up a big batch of your favorite marinade (make sure it has oil and vinegar to help tenderize the groundhog). Throw marinade and critter pieces into plastic trash bag and marinade around 2 to 3 days in the refrigerator. Take out marinated critter pieces and throw on the grill on low heat. Coo****il rare to medium rare. Do not overcook, critter will dry out. And no one likes their critter dry. NOTE:  To dress up your groundhog meal, place critter pieces on stick and call 'em Kabobs! Country-Style Groundhog 1 groundhog 1/2 c. flour 1/4 tsp. salt 1/4 tsp. pepper 1/4 c. cooking oil 1/2 tsp. sugar Clean and skin as soon as possible. Remove all sent glands. Cut off head, feet and tail. Cure in cool place by suspending from hook approximately 4 days. When ready to cook, lard according to recipe. Dress groundhog as you would a rabbit, removing the small sacs in the back and under the forearm. Soak groundhog overnight in salted water to remove wild flavor. Combine flour, salt and pepper; rub into groundhog pieces. Brown grounhog in hot oil in skillet; sprinkle with sugar. Reduce heat and add 1/2 cup water. Cover and simmer for about 30 minutes or until tender. Remove cover and cook for 10 minutes longer. SIDE DISHES:  Nice accompanyments would be sweet taters and cornbread! Remove from the water and season with salt, pepper and red pepper. Bake in an oven at 350°F. or cook over an open fire. Oriental Groundhog Recipe By: Hunters Information Service Amount Measure Ingredient Preparation Method 1 Ground hog 2 quarts Water 1/4 cup Salt 1/2 cup Soy sauce 2 cloves Garlic whole 3 Hot chili peppers whole 1/4 Onion 1/4 teaspoon Paprika 1/4 bunch Parsley whole 4 Beef bouillon cubes 1/4 teaspoon Freshly-ground white pepper 1 cup Beef or chicken broth Teriyaki glaze    Preheat oven to 325 degrees.    Cut meat into serving pieces and soak in 1 quar****er and salt for 3 hours.  Transfer meat to 1 quart clear water and soak 4 hours.  Drain and dry meat.  Place meat in a baking pan with beef broth, soy sauce, garlic cloves, chili pepper, onion, paprika, parsley, bouillon cubes and white pepper.  Cover and bake at 350 degrees for 1 to 1 1/2 hours.  Baste frequently.  Brush with teriyaki glaze while cooking. =================================== Waco Groundhog in Sour Cream Recipe By: "Indian Cookin'", compiled by Herb Walker, 1977 Amount Measure Ingredient Preparation Method 1 Groundhog, skinned & cleaned 1/2 cup Vinegar 1 tablespoon Salt 2 quarts Water 2 teaspoons Soda 1/2 cup Flour 1 teaspoon Salt 1/2 teaspoon Allspice 1/2 cup Bacon fat 3 small Wild onions 1/2 cup Water 1 cup Sour cream   Skin and clean the groundhog.  Wash and dry and put in an earthen   crock. Cover with water and a half cup of vinegar and 1 T. of salt.   Let stand in a cool place overnight.  In the morning, remove from   brine, wash and pat dry with a damp cloth.  In a large soup kettle   combine 2 qt. of water and 2 T. of soda.  Bring to a boil, lower the   heat and simmer for 15 minutes, removing the scum as it rises to the   surface. Drain and rinse the groundhog meat and cut into serving   pieces. Combinethe flour, salt and allspice and dredge the pieces of   meat in the mixture. Preheat the oven to 325 degrees. Melt the bacon   fat in a heavy iron frying pan until smoking. jBrown meat on all   sides. Transfer the browned meat into a greased 4 qt. casserole.   Arrange sliced onions on top, add water, cover and bake in a   preheated oven for 2 hours or until the meat is tender. Transfer the   meat to a heated platter to keep warm.  Put the casserole on top of   the stove over medium heat and spoon in the sour cream stirring   constantly. Do not let the sauce come to a boil.  Put the meat back   into the casserole and simmer for about 15 minutes.  Delicious served   with creamed dandelion leaves. 48 brown miniature M&M chocolate candies
4 chocolate cookies
white frosting
black decorating gel
  1. Remove a piece of cake the width of an Almond Joy candy from the center of a baked cupcake.
  2. Set the candy upright in the hole, then spread a layer of white frosting on the cupcake.
  3. For the groundhog's eyes, trim the ends from a white jelly bean, stick them in place with frosting, then dot them with black decorators' gel.
  4. Add a tiny triangle cut from a watermelon slice candy for a nose, brown M&M's Minis for ears and cheeks, and a tiny rectangular piece of white jelly bean for teeth.
  5. Sprinkle chocolate cookie crumbs around the partially emerged groundhog, and he's ready to greet his fans.

 Groundhog Day I don't have any groundhog recipes.  Frankly Wendy, I'm a little concerned that you have so many!  :) I do have a "critter story" from when I was a kid though. My dad used to go squirrel hunting.  My sister and I were fine with that, until he came home with squirrels.  I remember the first time dad came home with a bunch of squirrels and mom made squirrel for dinner.  It was kind of breaded & pan fried.  My sister & I were horrified, and surprise, surprise, we both announced that we didn't like the way squirrel tasted.  Yuk! So, the next time dad came home from hunting, he didn't come into the house until much later.  That night for dinner mom made something new.  It was called "crispy critter."  Yes, that's right, crispy critter, and you know, my sister and I just loved crispy critter...we couldn't get enough of it!  :)  Oh, the joy my parents must have had playing brain games with us when we were little!  True story!  We still all laugh about it when we all get together. Anyway, Happy Groundhog's Day.  I hope your crispy critter didn't come from Punxsutawney Phil or Sir Walter Wally!  :)  Otherwise, where would we get our weather reports?

I've got to give these recipes to my step father. He'll love them. His only question/comment about my WLS plans is to make sure I ask the Doc how long after surgery before I can eat Possum. - I hope he's kidding...BUT he's old school so he may not be. - Iris
