OT: HELP?! Buttermilk question

Ok so I'm about to cook and the recipe called for buttermilk. I"VE NEVER used buttermilk before...  

is it suppose to be lumpy? I'm pouring it and some of it is lumpy...   it smells fine (as if I would know) and the exp date says Jan 02.. but seriously.. Lumpy

What 'cha cook'n? I had a bout of that dang nausea this afternoon (first since way last week) so I'm sitting here gagging at the very idea of BUTTERMILK... and quite frankly, about anything... my tummy's not up to much tonight.

Every year, I make homemade banana bread for my team at work. Rather than a large loaf in my boss' office, I make miniature loafs and wrap them in plastic wrap with ribbon and give them as individual gifts. I found a recipe this year with Splenda I wanted to try.  1 1/3C Flour 1/2C Splenda 1 teaspoon baking powder 1/2 teaspoon baking soda Mix together and set aside (I added some nutmeg and cinnamon) 1 1/4C bananas mashed (approx 3) 1/3 C Buttermilk (I used low fat) 1 teaspoon vanilla 1 tablespoon canola oil Mix well. Then add to the dry mixture and mix.   Add in walnuts if desired. Bake on 350 for 45-55 min.  The individual loafs only took about 40-45 min.  I am not allowed to eat bread yet, so my daughter tested on. She said it was really good.  A little firm on the outside and soft and moist on the inside.   I had to tripple this recipe to get 24 miniature loafs. They are about 6 inches long and about 3 inches wide. Maybe a little bigger but not by much.

One of the contractors is bring us lunch in today (He does this every year). It's Smoked Brisket, Smoked Turkey, Smoked pork from a BBQ place around here called Holy Smokes. (Really good).

SO I also made a Low Fat Low Sugar dessert for this (From off a Cool Whip lid - but I modified it for me) 4oz LF Cream Cheese - room temperature 1 1/3C  Milk (I used 1 %) 1 (4 serv size) Box sugar free, fat free instant vanilla pudding 4 oz of Strong coffee - cooled LF Ghram Crackers Strawberries (optional) 2 C French Vanilla Cool Whip Line a dish with ghram crackers, then drizzle about 2 tablespoons of cooled coffee on them.  Beat cream cheese till smooth and slowly add milk. Add box of vanilla pudding mix and beat for 1 min on low speed.  Gently fold in Cool Whip. Use 1/2 of the pudding mixture and spread over ghram crackers. Layer ghram crackers on top of pudding and drizzle 2 tablespoons of coffee on the crackers.  Then use remaining pudding mixture on top.  Garnish as desired and refrigerate at least 2 hour before serving. I toped with a couple of dollups of French Vanilla Cool Whip and sliced strawberries and garnished all around the edges and in the center.

Yummmmmmmmmmm, they both sound good!  It's about time for me to get cranked up in the kitchen too.  Time to make our traditional Boiled Custard.  I'll post recipe.
