ROTD-Shrimp Salad

As we get caught up in the hustle bustle of the next week or so, we don't want to lose focus on eating properly... and time is in short supply right now.  Never fear, quick meals are here!  One of the quickest HIGH PROTEIN meals you can stir up that's sure to be a crowd pleaser is good old shrimp salad.  For you gals fortunate to be down there on the coast and have EZ access to those sweet NC shrimp, I'm JEALOUS.  For the rest of us, you can find frozen salad shrimp (on sale) for as little as 3-1# bags/$10.  I always keep shrimp in my freezer... when all else fails, it's shrimp for me!  I can thaw and eat, or throw into a pan for a quick stir fry. I like to eat my shrimp salad the day (or 2) after I make it... but suit yourself. I don't have NUT values for this, and it's one of those quickies you can make to throw in or leave out what makes your taste buds (and family) happy. To make mine, I boil a couple of eggs to dice and add into my thawed and WELL DRAINED shrimp.  Some lite of FF mayo goes in... sometimes I like to add some finely diced green or red pepper, but always have to add in some finely diced celery.  I'm not supposed to eat any raw fruits and veggies yet, but I have found if I dice VERY tiny, it works for me. Also a must for me is some finely diced red onion... but a little goes a long way.  I just want a hint of onion, not and onion salad that overpowers the sweet shrimp. On occasion, I've added in some Splenda pickle relish, but not always... just depends on my mood. That's about it for me!  Serve in lettuce leaves as a wrap, in low carb tortillas, or just eat as is!   Good protein, low carb and low fat... a yummy combination, and OH... F.A.S.T. too!! It's not much of a recipe, but when I was on puree I took some frozen shrimp, took off the tails, put it and some ff mayo into the old Magic Bullet and got a shrimp salad puree that really worked.  (You know how tired we get of sweet after a while).  Like I said, not a real complex recipe, but it saved me a number of times!

Nunh unh - when I'm just days out of post op it's called a seventy-beleven course meal!  I thank you so much for your posts, Wendy.  I am so not the Food network type (altho I love to watch).  You give me ideas that help jazz stuff up.  Thank you for this gift you share!

LOL You're Welcome... I'm glad to help!   I enjoy it and it gives me an outlet...
