Remind me again the name of that restaurant in Asheville that has the coffee rub/marinade you're looking for... As promised, I'm on a mission to help you find the recipe, or something similar!
I do remember you said it has nutmeg and allspice in it (cause I don't like either one of those spices so sounded yucky to me), but I have tons of recipe resources AND cheffing friends...
And also, clarify for me... you said it was a delicious marinade, but after thinking about the spices you mentioned, it sounded more like a rub... is that what it was? Rub (dry) or marinade (wet)???
Give me as many clues as you can...
And remind me again, what kind of meat did you say it was on??
Master! Alas! The hunt may be on. I too have been trying to find it, even since the Soiree.
The resturaunt was called Frankie Bones in Asheville. If you look on the menu on the far right is the "Boneyard'. I had the "Marinated Ribeye" described as "Cofee-spiced ribeye charcoal grilled and served with twice baked potato casserole" though I traded it for steamed asparagus.
When I asked what made up the marinade - all the waitress would tell me is "coffee grounds, nutmeg, all spice, brown sugar and some other seasonings".
My husband definately could taste sesame oil as part of it. The way it was coated on the steak, I would have called it a rub for sure.
