Low Carb Recipe of the Day *Chinese Pork & Shrimp Stuffed Mushrooms*

                Chinese Pork and Shrimp Stuffed Mushrooms

Recipe By     : The Ultimate Low-Carb Diet Cookbook Serving Size  : 24    Amount  Measure       Ingredient -- Preparation Method --------  ------------  --------------------------------   24      large         mushrooms -- stems removed      1/4  c.            extra virgin olive oil                         coarse salt      1/2  lb.           ground pork      1/4  lb.           cooked shrimp -- peel/devein/fine chop    3      T.            chopped green onions    1      T.            soy sauce      1/4  t.            fresh ground pepper

Preheat oven to 425.  Place mushrooms in large zippered bag and add oil.  Seal bag and turn to coat mushrooms.

Place mushrooms, stem side up, on a rimmed baking sheet.  Sprinkle a little salt inside each cap.  Bake for 10 mins.  Turn over and bake another 6 minutes.  Place, stem side down, on double thick paper towel and set aside to drain for 10 minutes. (The mushrooms can be stuffed without baking first but this keeps them from being soggy and enhances the flavor.)

Reduce heat to 400.  Combine other ingredients and blend well.  Stuff mushrooms with the filling.  Bake for 20-25 mins. or until filling is firm to the touch.

Hey Myrtis, The serving size is noted above as 24,  1 mushroom per serving. I'm assuming this recipe book is for your personal use since some of the recipes I'm posting are from other sources than my own recipes.  I'm making sure to note source or chef for those I know about when posting... don't want to be getting into copyright issues. This recipe (as noted) came from The Ultimate Low Carb Diet Cookbook and serving size is right under that.
