Mashed "Faux-Tatoes" (Low/No Carb) *Recipe of the Day*

Annie, If you haven't tried this yet, do!  YUMMMMMMM                     *  Exported from  MasterCook  * Mashed "Faux-Tatoes"

 

Recipe By     : online (?Weigh****chers) Serving Size  : 4     Amount  Measure       Ingredient -- Preparation Method --------  ------------  -------------------------------    6      c.            cauliflower florets (cut into small pieces)    8      T.            cream cheese (LoFat works well here)    2      T.            butter (or your fav)                         salt and pepper

 

Steam cauliflower until soft.  (This time will vary depending on the wattage of your oven.)   Measure cream cheese into bowl and cut into small pieces. (I actually just drain it and use the steamer ((see below) )to mash.  I just add the cheese and butter and seasonings into the steamer bowl.  The less dirty dishes for me the better, and I can mash or mix them right in that same cooking container.) Drain cauliflower and add to cheese.  Mash with potato masher or hand mixer.  Add butter, salt and pepper. NOTE:  To get a more mashed potato consistency, cook the cauliflower until VERY soft.  It will mash much easier.  Sometimes I use my tater masher, and sometimes I use my hand mixer. Both work fine.

 

                   - - - - - - - - - - - - - - - - - -  To steam this and other veggies, chicken, shrimp, etc. I use a Veggie Steamer/Rice Cooker you can get at Walmart.  They are usually beside the microwaves or in that area.  There's a basket in it that you can remove or leave in, depending on what you're cooking.  The last time I bought one, it was $8.95 and it's one of the most used things in both my home kitchen and my personal chef mobile kitchen.  This is one of my Top 10 Must Haves in the kitchen.   Progressive Microwave Rice and Pasta Set Found this picture online at HSN

I have seen this so many times and have never tried it.  But if Aunt Dee Dee said we should, then I will!  Anyone know the nutritional states on it?

Thanks Wendy, I have always wanted to try this but this sounds super easy and I like easy and wls friendly. As Robin said I am always intrested the the nutritinal values too. I am and have been an avid label reader. Lee says I cant go into a store without reading labels.                                                    Annie

I don't have NUT values handy for this one.  They can vary widely on whether you use real, lite or FF cream cheese and also, whether you use butter, or one of the many other options out there for butter.  Too many variables to factor in on this one... it's one of those recipes you can really trim down as much as you'd like by tweaking ingredients. Doing a search online brings up several similar recipes, but vary in values because one might use regular cream cheese and a little heavy whipping cream while others use lite cream cheese and either FF milk, or none at all. Also, when I make it, I just use a big head of cauliflower and don't measure it out.  I'm not going to waste any so I just cook the whole thing, so just by doing that, the calorie count will vary, but not by much since cauliflower has few calories.
