Today at WalMart I found the chicken sausage (which I had read about from people of OH). But now, what do I do with it??? Does anyone have any recipe ideas?  I bought the sweet italian flavor. 1 link:  130 cal, 7g fat, 1g cards, 0g sugar, 15 g protein

I think I know what brand you are talking about. Sam's (Wal-mart) carries it and also the same brand - they have a Asiago & Spinach stuffed Turkey Sausage that has similar Nutritional Stats.  I'm addicted to the Asiago & Spinach Turkey sausages and I've done several thing with mine.  Grilled them and sliced them up in an omlet Grilled them and sliced them up and made a pizze topping using Whole Wheat Carb Balance Tortiallas, 1 TBSP Alfredo, dieced up sun dried tomatoes, just a few flings of Pesto (literally dab my fork in it and fling it), and top it with low fat mozzerlla and fat free tomato & basil feta (bake for 8-10 min on 350) I've used them in a soup with mixed veggetables, made with Veggie Broth. I've sliced it open (butterflied) and cut up some roma tomato, sliced cheese, italian seasoning and broiled them open faced.  Steamed asparagus with this sprinkled with lemon pepper is awesome together! I've hollowed out a tomato and taken the insides and dieced it up, diced up the sausage as much as I could, added some crab meat or shrimp, bell pepper - diced, onion, garlic, cajun seasoning (though any would be good), some bread crumbs, feta cheese and mixed everything together and stuffed it back into the tomato shell and "corked" it with some Havarti cheese and baked it for a stuffed tomato dinner.  You could probably do the same as a stuffed bell pepper.  Now I can't stand cabbage - but I have a friend who like these sausages and when she makes stuffed cabbage - she uses these. Oh my!!!  I have so many things going through my head right this moment but my favorite way to cook it is to slice up some onion, bell peppers and saute' them in a little olive oil then add the sausage and saute them together until the sausage is done.  It is soooo good!  Sometimes I'll add a little spaghetti sauce to make it more italian tasting, either way is yummmmmmy!  I take the sausage out of the casing when I cook it, I can't handle the texture otherwise.   Have fun experimenting!!!

Yeah! Great ideas everyone.... Ellen, you got me.  Maybe it would be more fun to think of things " to do" with the chicken sausage. Thanks you guys.  I really appreciate it.

Use it any way you would any other kind of sausage... Grilled or griddled with peppers and onions for a State Fair meal! Remove from casings and make spaghetti sauce... I did that just last weekend with some turkey sausage... YUM I have a couple of favorite recipes I'll post in separate posts!
