Crustless Crab (or seafood) Quiche

Found this online somewhere and adapted it a bit.   Yummmmmmmm! Crustless Crab Quiche  

8 ounces  crabmeat and/or shrimp, lobster, etc.
1 cup LF cheeddar cheese, shredded (I like Swiss) 
1 cup onions, chopped
4 large eggs  (or use Egg Beaters)
1 cup skim or LF evaporated milk
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/8 teaspoon white pepper
1 dash paprika

(375 degrees for glass plate).

  1. Spray a 9" pie plate with non-stick spray.
  2. Combine crab (or seafood), onion and cheese.
  3. Press into pie plate.
  4. Beat together remaining ingredients except paprika and pour over the crab.
  5. Sprinkle with paprika.
  6. Bake 30 minutes.

I don't have the nut. values for this, but it has some good protein.  It's good for breakfast, brunch, lunch OR supper!  Add in a little cooked and crumbled turkey bacon for an added taste treat too.  And use whatever cheese suits your fancy.  This is one of those recipes where you will usually have the ingredients on hand for a quick throw-together.  Just keep some canned (or frozen) crab/shrimp on hand.  This is also easy to cool and cut into single portions, wrap and freeze for a quick zap in the microwave for breakfast on the go or to take to work for lunch. Wendy, It was a wonderful dish. I fixed it last night for dinner and it was a big hit. I did add a few more spices such as a little Old Bay and some red pepper Thanks for posting.                                               Annie
