Cajun Corn Soup (This will warm you up!)
Cajun Corn Soup
1 C. chopped onion
1 C. chopped green pepper
2 jalapeno peppers sliced
6 green onions, sliced
1/2 C. vegetable oil
1/2 C. all purpose flour (I omit)
3 C. Chicken Broth/Stock
3 carrots, sliced lengthwise and diced
1 lg can Cajun style stewed tomatoes
2 C. chopped peeled tomatoes
1 16 oz can tomato paste
2 pks. 16 oz each frozen corn
3 C. cubed fully cooked ham
1.5 lb smoked sausages, cut into 1/4 inch pieces
Ceyenne pepper to taste
Salt to taste
Hot pepper to taste
In a large Dutch oven, saute the onion, green pepper, jalapeno pepper, green onion and carrots in oil until tender, about 5-6 minutes. Gradually stir in flour til bubbly (I omit this). Stir in chicken broth, tomatoes and tomato paste. Stir in the corn, ham sausage, cayenne pepper, salt and hot pepper sauce. Bring to a boil, stirring frequently. Reduce heat; simmer uncovered for 1 hour, stirring occasionally.
Yield: 12-14 servings (about 24 for us!!!) Enjoy
