pumpkin recipes

I tried this one yesterday and it came out gooooood 1cu canned pumpkin 2 boxes SF jello pudding cheesecake flavored 1 1/4cu cold milk 1 tablespoon pumpkin spice seasoning 1cu cool whip (whatever kind you like, NSA, Light, FF) Mix the pudding mix, milk and spice... add in pumpkin - the mix will be thick! fold in the cool whip (you can use more or less... whatever you taste).  The mix needs to sit in the fridge 4 hours to set. My friend uses it as a pie filling using a pre-made graham cracker crust. After its set she takes a mix of crushed walnuts, brown sugar and butter and heats it all in the microwave... once cooled she pours it over the top of pie so it gives it a nice crunchy topping. I made just the filling yesterday to test it out and its pretty darn good... I was thinking of serving it more parfait style layering the mix, cool whip and maybe some pistashios or something to give it crunch... or even crunching up some graham crackers.  I made these on sunday and they were good...  pumpkin waffles or pumpkin pancakes Trader Joes sells a great whole wheat waffle/pancake mix... I will say it is MUCH thicker than your normal white mix so you have use much less in the waffle maker/pancake griddle. I made the mix according to the box (I did the smallest serving) added 1cu canned pumpkin, a splash on vanilla and a tablespoon of pumpkin spice. Maaaaan did they come out good... I did both waffles and pancakes. To top... you can use pumpkin butter (I didnt buy any so I dont know the stats), I made a pumpkin glaze using butter, splenda brown sugar, vanilla and some pumpkin on the stove until blended... of course syrup is a good choice too :-)

Current weight - 135 (2020 I lost 10lbs due to dedicating myself to working out more and being in better shape)

Mmmmmm.... They sound mouth-watering goooood! I just love pumpkin.

Thanks for the recipes. I wasn't sure how I was going to enjoy one of my favorite fall foods this year.

Ohhhhhhhhhhh....  that sounds good....  I usually don't like pumpkin pie but I LOVE cheesecake and pumpkin bread and stuff, so I WILL be trying this.  I didn't know Jello made a SF cheesecake pudding (this may be dangerous!!!!!!!!)   Thanks again!!!
