Recipe for Marinated Shrimp

Here is a recipe for marinated shrimp that is low-carb, low-fat  and high-protien ... It got good reviews at the Beach Trip this week-end, so I thought I'd share it with you. It is kind of sweet and sour because the shrimp have a natural sweetness that is paired with the balsamic vinegar which has a sweet/sour component. I hope that you enjoy it.

Marinated Shrimp

*  Cooked , peeled and deveined shrimp (That was 1.5 lbs, but you could just make up a small amount using frozen shrimp.)

*  1 bottle of Newman's Own Lite Balsalmic Vinegarette.

*  The zest and juice of one lemon.

*  Black pepper to taste.

*  This had green onion, but you could use finely diced shallots or red onion.

*  Chili paste to taste, this only had a little bit.

Mix everything but the shrimp in a glass dish/bowl (If you are not going to use it all at once, then just use 1/4 to 1/2 of the bottle of dressing when you make it up.) Add the shrimp. Chill for 6 to 8 hours. Then Enjoy!

Barb- Thanks SO much for posting this! I already told Ed that I wanted to make it for him to try! It was wonderful and a nice change of taste for shrimp. OMG! That sounds terrific. I purposely skipped dinner and now I am sorry I did. Will definately have to try this weekend. Hubby & I both love seafood and that sounds like a nice, cool, yummy treat. Thanks so much for sharing, Mare

You are welcome. That marinade is great w/crab and also some fish. Sometimes I use the marinade on raw shrimp and then grill or saute them.
