You won't know it's not potato salad

I posted a comment about this recipe on another post and had some requests for it. It is very good and you can change it up to your taste. I just found it a few weeks ago and it is great! Will be even better at a BBQ! Add additional veggies or leave out some if you choose. It is easy to adapt this! Enjoy!!! You won't know it's not potato salad 4 eggs 2 bags (1lb each) frozen caulifower florets 1 bag (10oz) frozen peas & carrots 1 3/4 C ff mayonnaise 1t salt 1/4t pepper 1/4t paprika 1T cider vinegar 1t yellow mustard 1C chopped celery 2/3C chopped onion 1.Cook and chop the eggs and set to the side. 2. In a large microwavable bowl, place frozen cauliflower, peas and carrots: cover and microwave on high for 20-30 min****il tender) stirring once about halfway through. Drain vegitables and rinse with cold water. Refrigerate for 30 minutes or until cool. 3. in a small bowl mix mayo, salt, pepper, 1/8t paprika, vinager and mustard: set aside. 4. Take cool veggies and drain any additional water. Chop and large pcs of cauliflower to resemble chunks of potato. add celery, onion and eggs. 5. Pour mayonnaise mixture over salad. Stir well. Sprinkle remaining paprika on the top. Enjoy!!

thanks for the recipe Darla, I can't wait to try it. I know my daughter-in-law and son will love it too (very very health conscious). I'll have to trick my husband and daughter! Another story entirely. Thanks again. E

I have tried something very similar but only with the cauliflower. After it's cooked you ma**** until it has the consistancy of of Mashed potatoes, then add the ff mayo to desired thickness and salt and pepper to taste.
